BAM Street Food - VIC
Christopher Wu Bam Street Food in Altona has been on my radar for a while and it definitely did not disappoint.
I’ve been smashing a lot of smash burgers lately, and this one sits in the upper echelon for sure. On the day I went, the beef had a proper crispy edge around the patty — exactly what you want from a smash. The middle could’ve been slightly juicier, but it was still very solid overall, and the sauce absolutely carried it home. It balanced everything out and made up for any slight dryness in the centre.
Also tried the chicken burger, which I think is a bit overlooked. It’s done with pieces rather than a full fillet — I know some people prefer whole fillets, but personally I like fillets for that consistent crunch and moisture. That said, this was still really good. I got the Nashville coating and the dusting was necessary — gave it that extra flavour kick. There are naturally thinner bits around the edges where you get slightly less chicken per bite, but overall it holds up well.
Still, it’s hard to go past that crispy beef on the Bam signature burger — that’s the hero.
The shoestring chips were solid too. Just your classic thin-cut style, but whatever seasoning they use tasted familiar in a nostalgic way — like something I’ve had before that always hits. Simple but done right.
Overall, Bam is doing smash burgers properly. Definitely one of the better ones I’ve had recently.
