5 /5 Christopher Wu: Bearded Pig — I had seen a few social media posts calling this the best BBQ in Melbourne, and I do believe it is one of, if not the best brisket in Melbourne. I would say it is very close competition to Wild Craft for the best in Victoria.
Focusing on the smokers themselves, these guys do a fantastic brisket. The type where it falls apart when you grab it from one end. Not like the exaggerated social media pulls, but as a paying walk-in customer with no special treatment, it was genuinely very good quality brisket.
I had the brisket on its own and in the sandwich. The sandwich was around $24, but they absolutely loaded it with brisket. I honestly think I got more brisket in the sandwich than in my BBQ pack. It was stacked with a chipotle or smoky sweet chilli mayo that worked perfectly with the meat. The American cheese slices were a great addition too, and each bite was packed with flavour. The pieces in the sandwich were slightly less fatty and juicy, but I think that actually worked better with the sauce, while the BBQ pack contained the fattier, juicier cuts.
The BBQ pack also came with mac and cheese, which was one of the better versions I have had at a BBQ spot. The slaw was refreshing and balanced out the fatty meats really well. The pork was fairly standard but at least it was not dry. In fact, it was better than most places. On the table they have their own hot sauce and smoky BBQ sauce, and they also pack sauce for takeaway if you are not dining in.
The meats here are definitely full on, juicy, and rich. It is not something I would have all the time, but as a treat it really hits.
Very laid back, chill team running the place. The layout is clean, the interior is nice, and people clean up after themselves. Overall a really solid BBQ experience.
