My partner and I decided to try Collins Kitchen for a casual date night, not expecting much, but it turned out to be one of the best dining experiences we’ve had in a long time! From the moment we stepped in, we were blown away by the atmosphere, service, and the quality of every dish we ordered.
We started with the Natural Oysters with Burnt Citrus Ponzu Dressing and the BBQ Half Shell Scallops with Smoked Cowboy Butter & Lardo – both absolutely delicious! The flavors were perfectly balanced, and the presentation was top-notch. We also tried the Moreton Bay Bug Roll with Yuzu Kosho Mayo, Tobiko & Housemade Parker Roll – so fresh and flavorful. The Wagyu Beef Tartare with Brisket Drippings, Smoked Egg Yolk, and Potato Crisps was a delightful surprise—so rich and tasty!
But the star of the show was without a doubt the Black Angus Brisket MBS 5+. I cannot even begin to describe how incredible this brisket was. It was incredibly tender, juicy, and packed with so much flavor—completely unexpected! We were both shocked at how perfectly it was cooked, and honestly, I’d go back just for that brisket alone. It was hands down the best BBQ brisket I’ve ever had, and this is not even a smokehouse!
For mains, we were disappointed that the New York Strip and Bone-In Sirloin were sold out, as they were the cuts we were most excited to try. However, we were pleasantly surprised by the Scotch Fillet O’Connor Premium Pasture-Fed MBS 4+. Even though it wasn’t what we originally planned, the scotch fillet was incredibly tender, juicy, and flavorful. Cooked to a perfect medium-rare, it was a total banger!
The thick-cut chips and creamy mash were amazing too—definitely recommend getting the mash with gravy, it was sensational.
As a thoughtful gesture for the steaks we wanted being sold out, they treated us to a complimentary slice of New York Cheesecake to share. It was the perfect amount after the substantial meal we had, and the cheesecake itself was silky, smooth, and absolutely delicious. What a lovely touch—it really added to the already fantastic experience.
